Birthdays, Apologies, Grossness, and Running

First I want to send a big shout out Happy Birthday to my Daddy! I know I have already told him about 5 times today but you can never hear it enough right? I was also told that this deathly sickness that has settled into my sinuses was my Dad’s doing and not my Mom’s. I didn’t even know my Dad was sick but apparently he got it first and then passed it on to my Mom. So, Mom, I’m sorry I blamed you 🙂

The funk has gravitated from my throat to my sinus cavities and is seeping out my nose (I know, TMI!) You know that awkward moment when you are vacuuming and your nose hocks a snot loogie? Yeah, that happened.

So let’s get away from the nasty stuff and move on to running, packing, and eating. Though food is not tasting the greatest right now, I am forcing myself to eat lots of eggs because they need to be used and I hate throwing away food. For lunch today, I had eggs scrambled with green pepper, tomato and mozzarella. I choked them down with some toast and grits, I think it would have been tasty in any other circumstance.

I’ve been spending the day cleaning and packing so I can see the hubster this weekend. Clearly Daisy is a big help when it come to packing.

I am still on my run streak, despite the breathing setback. I logged 2 miles yesterday and the longest, most painful mile today, but it is done. Oh well at least I got to see the pretty colors of fall.

So yeah, this box of tissues was full yesterday. In case anyone wants to send me an early Christmas present, I will probably finish this box by tonight 😉

Or juice, cause people need juice!

We’re going streaking!

Last night I really wanted a peanut butter sandwich made from my new giant jar of Jif natural crunchy. I spent about 5 minutes with my head stuck in the freezer trying to decide what vegetable to eat with my sandwich. Nothing I had seemed to go very well with peanut butter. I finally decided on okra. I knew I didn’t want it boiled because it would be to slimy and I didn’t want it fried because that’s not healthy (though oh so good!).

I looked in the cabinet and found a box of panko breading and decided to have baked okra. First I put the frozen okra in a bowl and ran water over it to defrost and wet it so it would stick to the breading. I added a half serving of the panko breading (only added 55 calories to the dish) along with some seasoning and pepper.

I shook that around in the bowl and then put it in a pie tin that I sprayed with Pam. Popped it in the oven at 350 degrees for about 20 minutes and then broiled it for another 3 minutes.

While it was broiling I made my peanut butter sandwich and I was so eager to eat that tasty goodness I forgot to get a picture of the best part of the jar. When you crack open one of these bad boys there are tons of peanut chunks at the very top, Chris and me often fight over who gets this part.

And the finished product, not really a cohesive meal, but it hit my cravings, so I was happy.

I told Daisy I was going to leave her for a couple of days so I guess she got sad and decided to cuddle with me last night. It is so hard to go to sleep with a 12.5 pound cat laying in your stomach but I allowed it because she doesn’t cuddle with me very often. Apparently sleeping on me didn’t give her enough shut eye.

This morning I spent some quality time with the bike, stair climber, and treadmill. Then after I got home I went for a 1 mile run outside.

Why only 1 mile?

Reason #1 I have decided to do the Runner’s World holiday streak challenge where you run everyday from Thanksgiving to New Year’s. I started a couple of days early to get mentally prepared, so I did an easy 2 miles yesterday and a faster (8:20) mile today.

Reason #2 I’m planning on running in a 10k fun run tomorrow morning so I can burn calories that I will eat back later in desserts.

Here is the link to the streak challenge if you are interested in participating.

Runner’s World Holiday Streak

After my run tomorrow, I will be headed to the boonies to spend the weekend with my parents and cousins. I most likely will not have internet, so if you don’t hear from me that is probably why, that or I have slipped into a food coma from all the deliciousness.

HAPPY THANKSGIVING!!

Gym time fun

I took my healing/rest day very seriously yesterday and stayed in bed all day. I did get up to feed my body (makes for faster healing), get some ice for my injuries, and to foam roll like no tomorrow.

This morning I woke up feeling some motivation to get sweaty , so I headed to the gym to get my cardio on. When I walked in the gym, I had a wonderful surprise waiting for me:

Yes, we finally got a stair climber! But first I needed to start easy, so I went with my go to stationary bike. I spent 35 minutes at a very easy pace, just feeling out my body and making sure I wasn’t doing any more damage. My hip was feeling tight at first but it seemed to loosen up about halfway through. After I finished, I hopped on the new stair climber, cranked up my Pandora 90s station and got to work. I felt some twinges in both of my Iliotibial bands so I made sure not to go too hard. Here was my attempt at sneaking a picture of me on my new favorite machine.

please excuse the blurriness, I was getting my stair climb on

I did some easy strength training then got on the treadmill to walk. I captured proof that I was taking it very easy. I walked for 28 minutes and then tried out some light jogging (4.5-5.0mph) for the last 2 minutes. It felt so good, I wanted to keep going but I controlled myself and stopped.

After I got home, I took off my shoes and this is what my socks looked like:

This was the first time I had worn those shoes since the Spartan Race spectator incident. I wonder how long it will take to get all of that dirt out of my shoes. After stretching, I made my favorite breakfast of banana walnut oatmeal, and yes I ate it out of a mixing bowl because all my other bowls were dirty.

Now here’s some Monday happy thoughts:

1. I have been thinking about chopping my hair off because it has been annoying me, but I decided to straighten it last week and fell back in love with my long hair.

2. I gave Daisy her favorite catnip toy and she got so happy:

And then promptly crashes:

Foodie Friday

*Disclaimer, I have a 17 miler on the books for tomorrow so this post will be all about food. I am not to blame for making you salivate.

Ten things I am enjoying right now:

1. Chris found these at Target and promptly put them in my hand. I would have preferred if they had peanut butter on them like regular Muddy Buddies, but they are still good. Chris thinks they taste like a Thin Mint without the chocolate.

2. I try to avoid caffeine because my body isn’t used to it but I drank 2 cups of this in less than 2 hours, so good!

3. I found these at Walmart and had to try them because I love dill. They did not disappoint, one serving= the entire box, not 6 crackers like they “suggest”.

4. I have been looking high and low for pistachios without salt and finally found some at Walmart. My new favorite snack.

5. Chris found my favorite peanut butter at Target in a 40 oz. jar, it is hard to find crunchy in a bigger size, wonder how long this will last me?

6. I saw these today on another blog: Running off the Reeses and now I must find them!

7. This strawberry that is as big as my hand and tastes as sweet as a spoonful of sugar (see, I can be healthy)

8. I have been looking forward to trying these for a while and I will finally get to on my run tomorrow, hope they are as tasty as they look!

9. Fueling for my run with a Mexican food buffet and catching up with friends.

10. I will leave you with one nonfood related item, unless you think pets are tasty, in that case stay away from my house. This sweet girl who does not want to leave my side, she was trying to play with my camera strap.

Is it normal for your cat to judge you?

Wednesday came, and it was time for me to head back home to Mississippi. My sweet Daddy got up and made me some delicious biscuits and sausage gravy for breakfast so I could get my grub on one last time before having to cook (aka microwave) for myself again.

Do you really think that sounds good Momma?

After breakfast I hit the road and enjoyed jamming out to the 90s pop station on Pandora, man those songs bring back memories. I couldn’t get a picture of Daisy judging my singing skills since I was driving, but here is a taste of the looks I kept getting every time I belted out to Britney or Christina (don’t judge)!

I’m going to kill you if you keep singing!

On Thursday I headed to the grocery store because my fridge and pantry were looking pretty bare. I really enjoy grocery shopping and taking my time seeing what’s new and analyzing each and every food I put in my cart. People, unfortunately, make this hard since I always feel like I am in someone’s way. I feel like there is no longer a time I can go to the store and it be empty. Anyone else have that problem? Or does your grocery store actually make the aisles big enough for more than one person in the aisle at a time?

Resting my foot is going okay, I am managing to stay off of it for the most part. When I do need to get up and walk on it, these lovely Georgia slippers take almost all of the pain away. I wonder if people would look at me funny if I tried to run the half marathon in them.

Side note from today’s lunch…if you have never tried eating cottage cheese and cucumbers together, do it now! (That is pepper added on top) This is one of the best ideas I have had and now it will be a new craving for at least the next few weeks.

Runner’s High Hangover

I’m sure you have heard it before: what goes up, must come down and that is exactly what I have been going through the last few days. I was riding an awesome runner’s high from Saturday’s race and then from my 13.5 mile run on Sunday. Unfortunately, I overdid it with all the running and spent all day Monday on the couch trying to rehab my sore foot.

Tuesday was spent driving the 4 hours back home, napping, unpacking, then repacking for my trip the following day. Wednesday I got up at 5am and headed out for my 5 hour drive to visit with the parentals for a little while. Still suffering from the inflamed tendon in my foot, I spent the last 2 days sitting around a lot and icing my foot.

This morning I decided to do a very short run to test out the foot to see if I could run the 5k race taking place tomorrow, since I already paid for it. I made it 1.3 miles before my foot started bothering me and walked the .2 miles back to the house, all the while the pain in my foot becoming worse. However, once I got back and took my shoe off the ache almost completely went away. I’m not sure what the means for the race tomorrow. I’m hoping I can run it and not do any more damage to my foot so I will still be able to run my half marathon in October.

On a happier note, I am getting tons of entertainment from watching Daisy bond with my parent’s animals, Samson and Mortimer. Animals are so funny and provide endless amounts of enjoyment!

This is sweet baby Mortimer, who is highly enjoying hissing, swatting, and chasing Daisy.

Oh and despite my reduction in activity I am happy to report that it has not decreased my desire for the endless amount of sweets throughout my parents house.

This is what is left of the pumpkin bread my Dad and I have devoured over the last 2 days…yummy!
